Simple One-Pan Skinny Salmon, Vegetables and Pasta

This one-pan meal is easy and requires only black pepper
and olive oil!

The fish provided a healthy “welcome home” for my body after a weekend excursion in steakhouse country.  Also, after my limited access to whole grains, the side of whole-wheat rigatoni really hit the spot.

Simple One-Pan Skinny Salmon, Vegetables and Pasta Recipe:

  • Boil Whole-Wheat Rigatoni or Penne Pasta for slightly under cooking time and drain.  A hint:  I cook an entire box of it and store it in the frig to serve with several dinners or lunches during week.
  • Pre-heat oven to 400 or 425 degrees.
  • Line a 13×9 pan with foil and spritz with olive oil. Toss in salmon filet and surround it with pasta topped with frozen cut-leaf spinach from a bag.  Add fresh chopped broccoli and other vegetables on the side of the pan.
  • Pepper it, drizzle with olive oil and then cook covered with foil for 20 minutes.  Uncover for 5 more minutes to get a little brown crisp to it if desired.

Serve and sprinkle with a serving of grated cheese.  The different textures taste wonderful, and the entire “skinny” meal is very large, filling and healthy!

    This recipe looks delish!! But, I wonder if fresh baby spinach could be substituted for the frozen, boxed spinach for a fresher taste. :o )
